Every Saturday starting September 21, Chef Alfred Santiago will be whipping up a range of contemporary Filipino creations.

Soak up the vibe of Filipino culture while you dine, with lively entertainment featuring traditional music and dance. The setup is like a big “boodle fight,” where you can dig into a variety of dishes and have a great time with friends. Start off with a refreshing aperitif like guava-passion fruit lambanog or a citrus-guava mocktail, then munch on unique appetizers like embutido-stuffed inasal wings, glazed banana liempo lumpia, pusit isaw (squid skewers), and hibe ukoy bao (dried shrimp fritter steamed bun).

One of my top picks from the appetizers is the Buro "Surf & Turf"—a delightful mix of fermented red rice and tender pork mask. These tiny bites are packed with flavor, making them the perfect starter to whet your appetite!

For my drink, I chose something unusual. Mais con Yelo is quite famous as a Filipino dessert, but as a drink, who would think? They blend sweet corn to capture its delicious flavor and then top it with crispy rice for a satisfying crunch.

While we have our “forgotten” dishes, we also have what we jokingly called “forbidden” delights like Crispy Pata and Lechon. Who can resist those mouthwatering favorites? But seriously, Salu-salo sa Waterside offers a treasure trove of Filipino dishes to savor, including inihaw na liempo, boiled crab, clam soup or halaan, adobo sa gata, and so much more! Each bite is a delicious celebration of Filipino flavors!

And of course, no meal is complete without dessert! Indulge in timeless favorites like creamy leche flan and refreshing buko pandan. Treat yourself to saging con yelo, sweet tupig, and a selection of fresh fruits. But my personal favorite has to be the delightful Pinipig Lollipop—it's a must-try that will have you coming back for more!
