Staying at home for almost a year made me interested in cooking and baking more than ever. Bought an oven and several baking tools and supplies. MAYA Oven Toaster and Decadence Premium cake mixes have made my life way easier. I've tried various cakes and pastries, cookies and sweets.
There's this trend in cake design that I've seen in various social media but never had the chance to try -- the Korean-inspired minimalist cake. Glad that The Maya Kitchen, which is now offering live interactive classes, had it as their lesson/topic last January 29, 2021.
How To Join
Visit https://themayakitchen.com/classes/ to view the different topics and schedule. Select a class and "Add to Cart". Fill out the needed details and pay via bank transfer, GCash, or PayPal. Most of the classes are priced at Php2,000 per device.
Two days before the class, you will receive the following:

Most of the needed ingredients for Classic Vanilla Cake with Whipped Cream Cheese Icing were available in our house except for cream cheese. I thought I'd still have time to buy one but I woke up just in time for the 10AM-class. So with that, I had little time to measure and prepare the ingredients.

Good thing, Chef Heart Cadiente is so nice and approachable. It was a relief when she mentioned that it is possible to make the icing without cream cheese. I love that the class is informative and interactive as participants were able to ask questions and have them answered right away. You can follow real-time as if you're in the class physically. Chef also gave preparation and baking tips which you don't usually get when you just search for recipes online. And oh, my hand mixer broke in the middle of the class! I had to run to my sister's house (a few blocks away) to borrow another mixer, and yet I was still able to follow with its clear instructions.

In the end, I was able to finish the activity and came up with this. I had fun in the process. Had a few challenge in making the frosting smooth so I decided to be creative with it. I love how the imperfection contributed to the overall feel. A minimalist cake can be forgiving (haha!).
Classic Vanilla with Cream Cheese Icing
CLASSIC VANILLA CAKE RECIPE
- 1⁄2 cup unsalted butter, softened
- 1 cup white granulated sugar
- 1 teaspoon vanilla extract
- 2 pieces whole eggs
- 1⁄2 cup evaporated milk
- 1 1⁄4 cups MAYA All Purpose Flour
- 1 teaspoon baking powder
- 1⁄2 teaspoon fine salt
- Preheat the oven to 325oF (160oC). Grease and line your cake pans
- Cream the butter, and sugar until light and fluffy. Add in eggs one at a time, beating well and scraping down the bowl in between each addition.
- In a separate bowl, sift together flours, baking powder and salt.
- Add half of the dry ingredients, mix, add the evaporated milk, mix then add in the other half of the dry ingredients. Scrape down to the bottom of the bowl to ensure batter is well incorporated.
- Pour the batter into the prepared pans and tap it a few times to make the batter level and allow any air bubbles to escape.
- Bake for 30-40 minutes until a tester inserted in the center of the cake comes out clean.
Yield: two 6” round cakes OR one 8” round cake
WHIPPED CREAM CHEESE ICING
- 1 cup cream cheese, softened
- 1/3 – 1⁄2 cup powdered sugar, sifted
- 2 cups non-dairy whipping cream
- 1 teaspoon vanilla extract
- Gel food coloring, as needed
- Prepare cream cheese icing, beat cream cheese with powdered sugar and vanilla extract until soft and smooth. While the mixer is running pour in whipping cream. Continue whipping until almost stiff peaks form. Color icing with desired hues
