We all have those random ideas and what-ifs that we never thought would come true. For Joe Vargas, former PBB teens housemate, the idea pops up when his girlfriend Bianca Pauline always brings him homemade longganisa from Cabanatuan. It was like a "what if we create a food place offering longganisa but with a creative and global twist?". And tadaaahh... the birth of Longga-Niche-Ah!.

Although both Joe and Bianca are full of passion and vision, it was Chef Janjie Ocoma, the Lakwatserong Kusinero, who put those concepts into something tangible, delicious, and worth the crave. And now, these creations can be found in this simple yet appealing stall at Buendia Food By The Court where both Joe and Bianca are very hands-on with the preparation and management.

Cheesy Longga Balls are like croquettes that are crunchy on the outside while inside is a bunch of cheesiness balanced by longganisa's sweet and savory taste.

Panini with longganisa filling -- that's Longga Nini! A creative way of incorporating longganisa in a sandwich making it handy for people who are always on the go. I love how the essence of panini and longganisa were never lost, yet went well together. It's cheesy, flavorful, and I like the texture and slight crunch on the toasted bread.

Pictures for now as I wasn't able to try this Crunchy Pancit Longga. But definitely one of those I'll look forward when I visit the stall again.

Teriyaki Longga is my favorite!! I already love longganisa before but its fusion with Japanese flavor (which is another favorite, by the way) made me love it even more! Its sweet flavorful sauce makes a good combination with the delish longganisa.

We're all familiar with salisbury steak which makes use of ground meat formed into a patty and then showered with gravy. But who would thought the same idea would also work for longganisa which is also made of ground meat? The salisbury sauce/gravy has a balanced texture and flavor that is good on its own. The longganisa's distinct taste made this dish, Salisbury Longga, stood out more.
I prefer longganisa over other Filipino breakfast staples, but never did I imagine that they can be even more enjoyable other than their classic forms. So if you love longganisa like me, or you're someone looking for other ways to enjoy longganisa, then Longga-Niche-Ah! is the perfect place for you. I can attest that those I've tried so far are all great tasting!
