A night of live music and free flowing craft beers is happening on July 7, 2016 as The Brewery At The Palace celebrates its first anniversary! But before that, I got to experience The Brewery for the first time and its new dishes made by Chef Carlo Miguel (same chef as Draft Gastropub).

A visit to The Brewery is like a "field trip" to the biggest on-site microbrewery in the country. So this is what a microbrewery looks like! It is huge spanning from the ground floor up to the second floor. I was able to get a wider view of it while I was in the second floor.

The place has that industrial feel with its microbrewery, exposed pipes, lighting, and mix of metal and wood in their tables and chairs. The walls also capture attention with its microbrewery scale model designs. Still, the place managed to provide that "I just want to chill, drink some unique beers, eat good food, and listen to live music" vibe.

The Brewery is definitely a place for beer enthusiasts and drinkers, but for a non-alcoholic drinker like me, I recommend the Brewery Green Tea. It's a refreshing citrus twist to green tea, which I really enjoyed.

The Brewery started with four (4) artisanal beers: Pilsner, IPA or Indian Pale Ale, Stout, and Wheat. Taking advantage of having their own brewery, Raj Sadhwani (CEO, The Brewery) worked with Oliver Elrotte (Resident Brew Master, The Brewery) to start using local ingredients and invent new concoctions. The newest additions are Epic IPA and Chokolate Boom.

One thing (aside from live music) that non-beer drinkers would enjoy in The Brewery is their food -- whether you pair it with beer, with brewed tea, or just plain water!

Soft Taco Platter consists of nine tacos (three pieces of each). These are good starters as they instantly tickle your taste buds. They are all good and flavorful.

Not Your Ordinary Pinoy Barbecue is true to its name, and is a new addition to the menu (good move!). This is the kind of barbecue that it didn't matter to me what meat was used -- beef, pork, or chicken. The meat were all tender and savory that it felt the flavors really seeped into the meat. I instantly fell in love with this that even though it is part of the appetizers, I reserved a portion so I can eat it last (save the best for last!).

Chorizo Burger Sliders look cute but are greatly filling. Their thick chorizo-burger patty won't deny it. It is The Brewery's attempt to recreate the famous "choriburger" of Boracay. Though, of course, The Brewery's version is more sophisticated as it made use of home-made Spanish chorizo.

Asian Chopped Chicken Salad (330Php)
Grilled chicken, pickled vegetables, chopped garlic peanuts, shrimp crackling bits, and mango, over mesculin greens

I find the Asian Chopped Chicken Salad very oriental and refreshing. It has bold vinaigrette dressing and nuts adding texture to the greens.

Sisilog is sisig, sinangag (fried rice), and itlog (egg). But what makes a Modern Sisilog? Do not make use of just any cooked egg... it has to be a 62 degree egg. Calamansi? Just topped it with calamansi foam. It may not appear as your usual sisilog but the essence is there, a bit toned down.

Beef Pot Roast is good and has really tender meat. One of those I'll recommend.

Beef Rendang is something new to me and so I have no expectations. But it surprised me with its Asian blend. It seemed to have coconut milk (gata) or curry so it's very Asian and overall good!
Clam and Mussel Spaghetti (480Php)
Spaghetti tossed in garlic, clam and mussels in wheat beer butter sauce

For some reason, the noodles and the sauce/soup of the Clam and Mussel Spaghetti reminded me of pho. The seafood essence is there, but later on I felt some slight bitterness. Then I knew it was infused with beer.

Haven't tried U.S. duck before but what made this Indonesian Fried Duck good was the sambal sauce. It really complemented the duck meat that without the sauce, I'm not sure if I'll enjoy it as much.

The Brewer's Cheesecake is overall soft but has spent grains that added texture to it. I like that it is not too sweet yet managed to neutralize the palate after all those varied yet good flavors from the previous dishes.

Wow, amazing line-up of dishes both from the main stays and new additions. I think I am starting to have an inclination on Chef Carlo Miguel's creations. I like that there is really no specific cuisine though for this line-up, he tries to create more of Oriental options. He mentioned that he always has hundreds of ideas and so he kept on changing the menu to add new offerings. And I'm of those excited to try what's his new creation will be.
The Brewery is open for functions/events of up to 300 guests. They also have a VIP room for groups of not more than 25 people. Their amenities include projector, white screen, stage with band equipment, sound system, and bar. Happy 1st Year The Brewery!
