The Experience:
How do they prepare Salmon? Let me count the ways... But seriously, it was over a hundred ways of having your favorite Salmon: sashimi, pizza, baked, kebab, pasta, grilled, paella, and so on and so forth. Personally, with over a wide selection, I didn't get to taste everything no matter how I wanted to.

I wasn't able to try everything, but with those that I got to taste, I was pretty impressed! Each dish with its unique preparation comes a great quality of flavor. It's not just about Salmon's versatility to star in different dishes. It's about having Salmon to portray in its best characters.

Now sit back and relax as I indulge you with some of the great dishes I get to savor at Salmon Nights.
Diamond Hotel Salmon Nights Kilawin Salmon |
Kilawin Salmon with Green Mango was refreshing. The sourness of green mango combined with raw salmon jump-started my appetite.
Diamond Hotel Salmon Nights Czech Baked Salmon |
This Czech Baked Salmon is topped with toasted minced garlic and is perfect with dill sauce. Flavors are oozing with every bite.
Diamond Hotel Salmon Nights Ultimate Slow Roasted Salmon |
Get ready for the Ultimate Slow Roasted Salmon in Dill Sauce. A bit of sourness and overall great flavor mishmashing in my mouth.
Diamond Hotel Salmon Nights Cannelloni Salmon |
As most of the dishes are exploding with flavors, Cannelloni Salmon with Spinach in Feta Cheese lies on the soft side. Mild flavors yet still enjoyable.
Diamond Hotel Salmon Nights Norwegian Grilled Salmon |
One of my favorites -- Norwegian Grilled Salmon in Spicy Mango Salsa. It wasn't as spicy as I thought it should be, but I love the sweet-sour tingling of mango salsa.
Diamond Hotel Salmon Nights Salmon Gravlax |
Salmon Gravlax with Vodka and Dill is spiced on its own. Soft melt-in-your-mount texture yet with a delicate kick.
Diamond Hotel Salmon Nights Salmon Kebab |
Chunks of salmon skewered and grilled carefully to come up with Salmon Kebab. A bite is an explosion of flavors reflecting its Middle East origin.

Aside from the great variety of Salmon preparation, this dinner buffet also features the usual sections as the appetizer counter and dessert station. Their dessert selection was lovely that I just can't get enough sweets. There's the Chocolate Truffle that came as a surprise with its very rich and thick chocolate flavor, huge Macaron with ice cream filling, chocolate fondue, the ever delicious Creme Brulee with its soft and creamy texture, some sugar-free choices, and more.
Salmons tend to be oily and "fishy", but I never encountered this problem in any of the dishes considering I've tried a lot! The salmon essence just came out naturally. I really enjoyed my night in this salmon feast and so I thank Spanky (and Allen) for the invite.
Finally, for my top picks: Czech Baked Salmon, Norwegian Grilled Salmon in Spicy Mango Salsa, and Creme Brulee for dessert.
