I now belong to a different team in my current job. Apparently, one of my new teammates was my former classmate in high school, who used to be Allen's classmate in college, and now has a pastry business together with his fiancee. What a way to greet us was with their best seller: SABAnoffee Pie.

It was introduced to me as "banoffee". But the moment I tried it, I knew there was something different. Yes, it's the banana as they're using saba! (It was only after I have eaten it that I was informed they were using saba.)
Another thing I noticed about SABAnoffee was that it wasn't too sweet, nor had a sugar-sweet taste. The sweetness of this dessert naturally and mostly came from the saba.
The crushed graham crust may be the sweetest but it was well-balanced by layers of banana slices, toffee, and whipped cream.

I've learned that Tintan's Pastries is working with Gawad Kalinga's Center for Social Innovation. They already have plans of teaching the Gawad Kalinga Nanays to produce the pastries, and also to get the raw products, such as the saba, from the Gawad Kalinga Farmers. Glad to know that they are getting involved in such social actions.
